Kamimatsuya

Uematsuya sits at the centre of Bessho Onsen — the oldest hot spring settlement in Nagano Prefecture, a quiet town of Kamakura-era temples, stone Buddhas, and the particular stillness of a place that remembers the Sanada clan. The inn's most decisive quality is its kitchen: a chisan chisho philosophy that refuses the sea entirely, drawing from Shinshu's own high-altitude fields, river valleys, and the inn's own vegetable garden.

A perfect meal score on Ikyu is rare at any price tier; at ¥7,000 per person it marks a kitchen with genuine conviction. The sulfur spring runs kakenagashi through six distinct bathing spaces at 60 litres per minute, and the midnight noren exchange — when the gender-separated baths silently reverse — is a small ritual guests carry home.

Where the inn does not reach the highest tier is in the physical fabric of the rooms: the 2020 renovation delivers order and cleanliness, but Ikyu's room score of 4.11 signals functional rather than deeply curated spaces — the tokonoma arrangements and material depth of the great aesthetic inns are not yet in evidence. What the guest remembers is the food and the water; the room recedes.
