Yamabiko earns its place in the guide on the strength of its kitchen. An Ikyu meals rating of 4.91 — among the highest in the TRG data set — is not a statistical accident at an inn that names itself a kappo establishment, and the head chef's practice of personally gathering sansai from the Northern Alps foothills is the animating principle of a place that understands cuisine as an act of landscape interpretation.
