Bessho Onsen Nanakusa no Yu

The chef's stated philosophy — listening to seasonal ingredients rather than imposing upon them — is borne out in a kaiseki anchored by Shinshu salmon, A5 black beef, and mountain herbs specific to this prefecture, not borrowed from elsewhere. The top-floor rotenburo commands the Shiodaira plain toward Mount Asama, a prospect that earns its reputation as the finest scenic bath position in Bessho, available through the night and into the dawn.
