Arima Onsen Kinzan

Kinzan is a Michelin-starred ryotei ryokan approaching its centenary in Arima, one of Japan's three ancient hot spring towns. Its Kyoto-style creative kaiseki — built on Hyogo's five regional larders, from Akashi sea bream to Hammasaka matsuba crab — is the clear pillar of the stay and the only Michelin-starred ryokan cuisine in the prefecture.

The nakai system is rigorously structured, each attendant serving no more than two groups per day, and the waka-okami's salary reforms have stabilised a team that operates with visible pride. The kinsen water is among Japan's most mineral-rich, though its delivery through partial recirculation and chlorine treatment falls short of the kakenagashi standard.

A bold East Wing renovation has produced handsome contemporary suites, but in reaching for the near-future ryokan, Kinzan has traded some of the quieter material poetry — the buckwheat pillow, the brush pen, the aged wood — for mist saunas and automatic doors. The thing a guest will remember: the kaiseki served dish by dish in the room, each plate arriving at its correct temperature, the nakai kneeling to explain the provenance of a single piece of Akashi tai.
