Yumori Tanakaya

Yumori Tanakaya is the guardian its name claims to be: a Meiji-era inn on the Bokki River gorge in Shiobara that controls three hot spring sources, all flowing without recirculation at 200 litres per minute and certified drinkable — a confidence in the water that echoes the inn's 19th-century promotional guarantee to refund lodging if the spring fails to heal. The descent to the wild outdoor bath — 320 steps through beech and mizunara forest, the river audible before it is visible — is among the more arresting approach sequences in the Kantō onsen landscape, and one that a lift or a golf cart would ruin entirely.

The irori hearth at the centre of the evening meal, set with Tochigi wagyu, Nasu vegetables, and seasonal fish shipped from Toyama Port, produces warmth that is as much material as culinary; the proprietress attending to an elderly guest with specific, unrequested care confirms that the spirit of 1884 has not entirely ceded to the procedural. Against this, the communal bath interior shows its years without grace — ceiling, walls, and floor betraying their age in a way that the aged wood and mineral-stained stone of the gorge baths do not — and the gap between the quality of the service and the quality of the physical plant is this inn's one honest limitation.

What a guest carries home is the gorge at dawn, sulfur on the skin, and a charcoal smell that belongs to Shiobara and nowhere else.
