Yamashinobu

The kitchen constructs its kaiseki from two distinct regional arguments: Aso highland ingredients, basashi, aka-ushi beef, homemade soba, yamame from cold mountain streams, and Amakusa Bay seafood, giving the meal genuine topographic character.
