The establishment's identity rests on a single, unusually clear proposition: the fifth-generation proprietor-chef catches or selects the fish himself, handles every element of the shunsai kaiseki personally, and serves it at the temperature and sequence he has determined.

In Toyama this matters — shiro-ebi, a defining Toyama Bay speciality, arrives at the table with the kind of specificity that only proximity to its source can produce. The garden — old pine and pond, a tea room at the water's edge — carries the accumulated composure of 110 years without obvious intervention.
