Tachibanaya

For 370 years Tachibanaya has stood at the edge of the Atsumi River, and the inn carries that duration without affectation — in the worn dignity of its koi garden, in a kitchen held to be the finest in the onsen-town by those who eat their way through it, and in the nakai who move without noise through private dining rooms. The kaiseki is built on the logic of the Shonai plain: Japan Sea seafood, Yamagata beef, mountain vegetables, and two premium rice varieties — Haenuki for dinner, Tsuyahime for breakfast — named with the seriousness of proper nouns.

The sodium-calcium-chloride-sulfate water fills hinoki-scented bathing spaces open to the night air, drawing on a source that has served Atsumi Onsen for a millennium. Seventy-six rooms dilute the intimacy that defines the highest echelon, and one restroom wing awaits the renovation that would complete an otherwise composed property; what rescues Tachibanaya from mere competence is the proprietress appearing tableside to trace the dish — the moment guests carry home.
