Sekitei Ishida

石苔亭いしだ occupies Achi Village — which holds by measurable photometric record the darkest accessible skies in Japan — in a single-storey sukiya compound whose architecture announces unusual cultural seriousness from the moment of arrival: a cypress-bark-roofed Noh stage faces the main approach, a sitting tea house anchors the garden, and 17 tatami rooms are spaced with sufficient generosity that quiet between them feels structural rather than accidental. The alkaline sulfur water of Hirugami — smooth and skin-softening in the manner that only genuinely high-pH mineral water achieves — moves through rocky cave baths and rotenburo hewn from local stone, a bathing landscape of coherent character that falls narrowly short of its highest expression through the absence of kakenagashi flow.

The kitchen works honourably with Shinshu's mountain larder and holds to the seasonal kaiseki sequence with discipline, though a habit of pre-grilling the yakimono course rather than finishing it tableside deprives the meal of its final register at a price point where this shortcut registers. What a guest carries home is the nightly 紫宸殿の宴 on the Noh stage, and then — later, in the rotenburo — a sky of a quality that most of Japan has forgotten.
