Cuisine expresses seasonal intent without the chef-driven philosophy or regional specificity that marks the highest tier of the Guide — the kitchen is caring and competent, but not yet a destination in itself, and the Ikyu food score of 4.68 is the one subcriteria that trails the otherwise even panel. At ten rooms, the structural conditions for ichigo ichie are present; what guests carry home from Kounkan is the amber weight of the water and the warmth of the nakai, not a single unrepeatable ritual of the kind that defines the guide's upper register.
