Katasekan Hiina

Katasekan Hiina occupies a hillside position above Sagami Bay in the Katase Onsen district of Higashiizu-cho, its nine baths fed by a 96°C chloride spring that deposits 湯の華 precipitate, a mineral honesty that distinguishes it from inns that merely heat their water. Chef Koji Koyanagi carries a lineage traceable to Kitaoji Rosanjin; his WAON programme channels Izu's coastline and interior mountains into a kaiseki sequence built around kinmedai, spiny lobster, and abalone: ingredients that could not arrive from anywhere else on the map.

The Ishii Architectural Office has given the rooms a contemporary Sukiya openness (extended verandas facing the Pacific, private Shigaraki ceramic rotenburo on raised terraces) that serves this particular site better than enclosed tradition might, though guests seeking the earned patina of wabi-sabi will register the absence of garden moss, aged timber, and seasonal alcove. The one thing a guest will remember: a private ceramic rotenburo at midnight, the Izu Islands barely visible on the dark horizon, Sagami Bay receiving the full weight of the stars.
