Tsuta Onsen Ryokan

At the mouth of Oirase Gorge, inside a beech forest that filters the light before it reaches you, stands a wooden building from 1918 whose interior still carries the proportions and materials, beech, horse chestnut, dark corridor timber, of the Taisho period.

The onsen at Tsuta is singular in Japan: 足元湧出, water rising silently through the bath floor from a spring that has not touched open air before reaching the body of the bather, is an encounter with hot spring water in its most unmediated state, and it cannot be replicated elsewhere.

The staff present each kaiseki dinner alongside a sourcing map tracing the precise Aomori origin of each ingredient, a practice that places the meal honestly within its prefecture, though the cooking technique does not always match the ambition of the ingredient story. The main building's shared bathroom arrangement introduces a shitsurai constraint that the finest ryokan at this price tier have resolved; and the 2022 luxury villa, for all its architect's skill, sits at a slight aesthetic remove from the century-old main house it adjoins.

Official records distinguish the hot-spring history, documented from 1147, from the present main building, completed in 1918. The thirty-five-room inn also offers a reservable private bath fed in the same unusual way from below. A pre-booked shuttle from Shichinohe-Towada Station is the cleanest arrival, especially when snow or autumn traffic slows the mountain road.
