Tekkosen Honkan

Tekkosen Honkan has stood at the junction of the Nakasendo and Koshu Kaido in Shimosuwa since 1904, its wooden structure raised by 宮大工 — the shrine carpenters whose craft is otherwise reserved for temples and shrines — with each of the six rooms architecturally distinct, the floor plans asymmetric by design, the joinery carrying the intelligence of a master working with intention rather than repetition. The spring — the 旦過の湯, iron-rich and alkaline, delivered in 100% kakenagashi flow — has been marking itself on the skin of guests since the Meiji era; that the inn began as a kappou restaurant means the cuisine carries comparable longevity, with highland vegetables, fresh carp washed in the spring water itself, and basashi from Shinshu horses — all served in the room by a nakai who can explain each dish by origin.

What Tetsukosen Honkan cannot claim in kaiseki formality — the sequential lacquerware, the architectural progression from sakizuke to mizugashi — it compensates with the kind of unhurried, house-specific knowledge that cannot be acquired from a chef training manual: the carp has been prepared this way here, in this water, for over a century. A guest who sleeps in a shrine-carpenter room, soaks in iron water at midnight, and eats fish rinsed in that same spring will understand something about Suwa that no other inn in Japan can explain in quite the same terms.
