A Kyoto-trained chef directs the kitchen through a monthly-rotating kaiseki course anchored in the terroir of a genuinely distinguished region — Izu wasabi from the river valleys, Sagami Bay seafood in its season, mountain vegetables at their peak — and the quality has drawn unsolicited comparison, in multiple reviews, to Michelin-recognised cooking. What prevents Sagasawakan from ascending further in these pages is the relative thinness of its material culture: Japanese-Western room options soften the traditional immersion, modern resort amenities including a pool and spa dilute the wabi-sabi register, and the shitsurai does not speak with a coherent local craft identity; the memory that one carries home is reliably of standing in the private rotenburo with the sound of the Kano River audible below.
