Kakurean Hidaji

Kakurean Hidaji occupies a narrow fold of the Fukuchi valley at 1,000 metres, its 107-year-old timber frame carrying the weight of an inn that has never asked to be anything other than what it is. The kitchen refuses every ingredient from the sea — irori-grilled iwana char, Hida beef on hot stone, a grandmother's ころ芋 passed between seasons — and this refusal is not a limitation but a philosophical position.

The onsen credentials are genuine: Fukuchi is among Japan's hundred famous hot springs, its kakenagashi waters drawn through private hinoki and rock baths in every room, the riverside communal baths opening as private kashikiri after nine-thirty. Twelve rooms at this altitude, adults only, with a river audible from every bath — the inn is arranged to produce precisely the experience it offers: not the polished lacquerware of a Kyoto ryokan, but the honest beauty of a mountain that has received travellers for a very long time.
