Chausuyama Onsen Mori no Yado Yuseikan

Mori no Yado Yuseikan is a Chausuyama Onsen stay where the kitchen and garden are closely linked to the seasons. Its open-air bath sits in a maintained garden, shifting from green foliage to autumn colour and winter snow.

Meals are a particular strength. Amago from clear streams and goheimochi are grilled over charcoal, while plans may include Shinshu beef, local vegetables, wild boar hot pot or an autumn matsutake kaiseki. The cooking is specific to southern Shinshu and changes with the calendar.
