Ippen-an

Positioned above Kumihama Bay on the Tango Peninsula, Ippen-an is built around a single conviction: that the bath is the centre of everything. Each of the seven villas holds its own kakenagashi hinoki bath and an open-air Choshu-style pool fed by a sodium-calcium chloride spring whose milky cloudiness is the inn's most immediate signature.

The kitchen works the Tango pantry with genuine conviction — Matsuba crab from November, a full sequence of Sea of Japan seafood across the year, presented with evident care for vessel and sequence as well as flavour. Service generates the repeat visits that are the truest indicator of an inn's hold on its guests: one reviewer returned the following year specifically to complete the crab dinner cut short by illness.

Where Ippen-an is less assured is in the depth of its interior atmosphere — the rooms are comfortable and well-appointed, yet their modern polish stops short of the wabi-sabi stillness of the finest onsen ryokan. The water, however, is exceptional, and the Tango kitchen does not need apology.
