Komuroya Ryokan

Komuroya is a four-room inn in Esaki, at the northern edge of Hagi. Japanese and Japanese-Western rooms keep the property intimate, while its small scale allows the restaurant to define the experience.

The chef buys seasonal ingredients directly from Esaki Bay and nearby mountains, then serves Kyoto-influenced creative French cuisine designed to be eaten with chopsticks. That meeting of local sourcing and a cross-cultural technique gives dinner a distinctive voice.
